Preheat oven to 350°
Add shortening and sugar to mixing bowl and thoroughly cream
Add eggs and molasses and then beat well
In a separate bowl, sift the flour, salt, baking soda, cinnamon and ginger
Add the dry ingredients and coffee to the wet, alternating as you add
Drop onto baking sheet from a teaspoon, leave room for the cookies to spread
Bake for 15 minutes
