Preheat oven to 325 F
In a large bowl, add honey, oil, brown sugar, vanilla extract, salt, and cinnamon. Whisk until combined.
Fold in the nuts and oats.
Spread the mixture onto a baking sheet.
Bake 35 to 45 minutes, rotating the baking sheet at 18-20 minutes.
Check granola frequently (every 3-4 minutes) to avoid burning. Once the edges start turning golden brown, it will only need to cook a few minutes longer.
Remove the baking sheet from the oven and allow to cool for an hour.
Break up the granola and mix in the dried fruit.
Mixture can be stored in an air tight container for up to 2 weeks.
