
Method
- Preheat oven to 350°
- Add shortening and sugar to mixing bowl and thoroughly cream
- Add eggs and molasses and then beat well
- In a separate bowl, sift the flour, salt, baking soda, cinnamon and ginger
- Add the dry ingredients and coffee to the wet, alternating as you add
- Drop onto baking sheet from a teaspoon, leave room for the cookies to spread
- Bake for 15 minutes
