Corn Muffins

Ingredients
  

  • cup shortening
  • cup sugar
  • 1 egg beaten
  • cups milk
  • 1 cup flour sifted
  • 4 tsp baking powder
  • ½ tsp salt
  • 1 cup corn meal

Method
 

  1. Cream shortening and sugar; add egg and milk
  2. Add flour with baking powder and salt.
  3. Add corn meal and stir just enough to mix.
  4. Fill greased muffin pan ⅔ full
  5. Preheat oven to 425℉, and bake for 25 minutes.
