Ingredients
- ⅓ cup shortening
- ⅓ cup sugar
- 1 egg beaten
- 1¼ cups milk
- 1 cup flour sifted
- 4 tsp baking powder
- ½ tsp salt
- 1 cup corn meal
Instructions
- Cream shortening and sugar; add egg and milk
- Add flour with baking powder and salt.
- Add corn meal and stir just enough to mix.
- Fill greased muffin pan ⅔ full
- Preheat oven to 425℉, and bake for 25 minutes.
