Homemade Granola

Ingredients
- 1/3 cup honey
- 1/3 cup brown sugar
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup vegetable oil
- 5 cups old fashioned oats
- 2 cups chopped pecans
- 1 cup dried cranberries
- 1 cup raisins
Instructions
- Preheat oven to 325 F
- In a large bowl, add honey, oil, brown sugar, vanilla extract, salt, and cinnamon. Whisk until combined.
- Fold in the nuts and oats.
- Spread the mixture onto a baking sheet.
- Bake 35 to 45 minutes, rotating the baking sheet at 18-20 minutes.
- Check granola frequently (every 3-4 minutes) to avoid burning. Once the edges start turning golden brown, it will only need to cook a few minutes longer.
- Remove the baking sheet from the oven and allow to cool for an hour.
- Break up the granola and mix in the dried fruit.
- Mixture can be stored in an air tight container for up to 2 weeks.
