Homemade Granola

Ingredients
  

  • 1/3 cup honey
  • 1/3 cup brown sugar
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup vegetable oil
  • 5 cups old fashioned oats
  • 2 cups chopped pecans
  • 1 cup dried cranberries
  • 1 cup raisins

Instructions
 

  • Preheat oven to 325 F
  • In a large bowl, add honey, oil, brown sugar, vanilla extract, salt, and cinnamon. Whisk until combined.
  • Fold in the nuts and oats.
  • Spread the mixture onto a baking sheet.
  • Bake 35 to 45 minutes, rotating the baking sheet at 18-20 minutes.
  • Check granola frequently (every 3-4 minutes) to avoid burning. Once the edges start turning golden brown, it will only need to cook a few minutes longer.
  • Remove the baking sheet from the oven and allow to cool for an hour.
  • Break up the granola and mix in the dried fruit.
  • Mixture can be stored in an air tight container for up to 2 weeks.
