Ingredients
  

Chicken Cakes
  • 1 egg beaten
  • 1/4 cup mayonnaise
  • 1 tbsp chopped basil (or 1 tsp dried)
  • 2 cloves garlic minced
  • 1/2 cup breadcrumbs
  • 1/3 cup red onion diced
  • 3 cups cooked chicken shredded
  • 1 tbsp olive oil
Cilantro Garlic Mayonnaise (optional)
  • 1/2 cup mayonnaise
  • 1 tbsp cilantro
  • 1 garlic clove minced

Method
 

Chicken Patties
  1. In a large bowl, mix the egg, mayonnaise, breadcrumbs, diced red onion, basil, and minced garlic.
  2. Add shredded chicken and stir until well-combined.
  3. Compress about 1/4 cup of the mixture into a patty shape, about 1/2 inch thick.
  4. Heat the olive oil over medium heat.
  5. Add just enough chicken patties to fit the size of the pan, and cook for about 3 minutes on each side, or until browned.
  6. Place patties on a paper towel lined plate to cool.
Cilantro Garlic Mayonnaise
  1. Simply combine all ingredients in a bowl.
