Method
Chicken Patties
- In a large bowl, mix the egg, mayonnaise, breadcrumbs, diced red onion, basil, and minced garlic.
- Add shredded chicken and stir until well-combined.
- Compress about 1/4 cup of the mixture into a patty shape, about 1/2 inch thick.
- Heat the olive oil over medium heat.
- Add just enough chicken patties to fit the size of the pan, and cook for about 3 minutes on each side, or until browned.
- Place patties on a paper towel lined plate to cool.
