Orange Cranberry Bread

Ingredients
  

  • 2 cups flour
  • 1 cup sugar
  • 1-1/2 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp baking soda
  • 1/4 cup butter room temperature
  • 1 cup orange juice
  • 1 tbsp orange zest
  • 1 egg
  • 2 cups cranberries, cut in half
  • 1/2 cup walnuts optional

Method
 

  1. Preheat oven to 350 °F
  2. Prepare a 9 inch bread pan by spraying with a non-stick cooking spray.
  3. In a mixing bowl, combine the flour, sugar, baking powder, salt, and baking soda.
  4. Add butter, then mix until the mixture is crumbly.
  5. While mixing, slowly add orange juice, a little at a time, until smooth and creamy.
  6. Add egg and zest, and mix well.
  7. Fold in the cranberries. Walnuts can also be added at this time.
  8. Pour the batter into the prepared loaf pan and bake 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
