Orange Cranberry Bread

Ingredients
  

  • 2 cups flour
  • 1 cup sugar
  • 1-1/2 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp baking soda
  • 1/4 cup butter room temperature
  • 1 cup orange juice
  • 1 tbsp orange zest
  • 1 egg
  • 2 cups cranberries, cut in half
  • 1/2 cup walnuts optional

Instructions
 

  • Preheat oven to 350 °F
  • Prepare a 9 inch bread pan by spraying with a non-stick cooking spray.
  • In a mixing bowl, combine the flour, sugar, baking powder, salt, and baking soda.
  • Add butter, then mix until the mixture is crumbly.
  • While mixing, slowly add orange juice, a little at a time, until smooth and creamy.
  • Add egg and zest, and mix well.
  • Fold in the cranberries. Walnuts can also be added at this time.
  • Pour the batter into the prepared loaf pan and bake 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
