Apple Pie Overnight Oats

Ingredients
  

For Overnight Oats

  • 1/2 cup rolled oats
  • 1 tbsp ground flax
  • 2 tsp brown sugar
  • 1 tsp apple pie spice
  • pinch sea salt
  • 2/3 cup milk of choice

For Apple Mixture

  • 1 medium sized apple diced
  • 1 tsp lemon juice
  • 2 tbsp water
  • 1/2 tsp cinnamon

Instructions
 

  • Mix the overnight oats ingredients together in a container until there are no clumps.
  • In a small saucepan, bring the apple ingredients to a light simmer. Cook over medium-high heat, stirring often, until most of the liquid is gone. (about 10 minutes)
  • Scoop the apples on the top of the overnight oats and allow to cool for a few minutes. Cover and place in the refrigerator.
