Homemade Tater Tots

Ingredients
  

  • 2 lbs potatoes
  • 1/2 tbsp corn starch
  • 1/2 tsp season salt
  • 1/2 tsp garlic powder
  • pinch of pepper
  • 2 tbsp finely chopped onions (or onion powder)
  • oil for frying

Instructions
 

  • Cut the potatoes into fourths and parboil them in a generous amount of water to cover.
  • Allow to cool enough to handle them.
  • Grate the potatoes using the large holes of your grater.
  • Gently place the grated potatoes in a bowl and add the corn starch, salt, pepper, and onion. Mix gently.
  • Let stand for about 5 minutes.
  • Using 1-1/2 tsp of potato mixture, gently shape into the form of a tot. Spray each tot lightly with an olive or avocado oil, and place onto a cookie sheet and freeze until ready to use.
  • Heat up oil to 355-360 °F
  • Place only a few tater tots at a time in the oil, and fry until they are just golden brown.
