Method
- Cut the potatoes into fourths and parboil them in a generous amount of water to cover.
- Allow to cool enough to handle them.
- Grate the potatoes using the large holes of your grater.
- Gently place the grated potatoes in a bowl and add the corn starch, salt, pepper, and onion. Mix gently.
- Let stand for about 5 minutes.
- Using 1-1/2 tsp of potato mixture, gently shape into the form of a tot. Spray each tot lightly with an olive or avocado oil, and place onto a cookie sheet and freeze until ready to use.
- Heat up oil to 355-360 °F
- Place only a few tater tots at a time in the oil, and fry until they are just golden brown.
