Homemade Tater Tots

Ingredients
  

  • 2 lbs potatoes
  • 1/2 tbsp corn starch
  • 1/2 tsp season salt
  • 1/2 tsp garlic powder
  • pinch of pepper
  • 2 tbsp finely chopped onions (or onion powder)
  • oil for frying

Method
 

  1. Cut the potatoes into fourths and parboil them in a generous amount of water to cover.
  2. Allow to cool enough to handle them.
  3. Grate the potatoes using the large holes of your grater.
  4. Gently place the grated potatoes in a bowl and add the corn starch, salt, pepper, and onion. Mix gently.
  5. Let stand for about 5 minutes.
  6. Using 1-1/2 tsp of potato mixture, gently shape into the form of a tot. Spray each tot lightly with an olive or avocado oil, and place onto a cookie sheet and freeze until ready to use.
  7. Heat up oil to 355-360 °F
  8. Place only a few tater tots at a time in the oil, and fry until they are just golden brown.
