Pumpkin Bread with Brown Sugar Pecan Topping
Ingredients
Pumpkin Bread
- 2 cups all-purpose flour
- 1-¼ tsp baking powder
- ½ tsp baking soda
- 1-½ tsp cinnamon
- ½ tsp salt
- ½ tsp nutmeg
- ½ tsp cloves
- ¼ tsp ginger
- 1 tsp pumpkin pie spice
- 4 large eggs
- 15 oz pumpkin puree
- 1 cup sugar
- ½ cup light brown sugar packed
- ⅔ cup vegetable oil
Brown Sugar Pecan Topping
- ¾ cup brown sugar
- ¼ cup flour
- ¾ cup pecans chopped
- ¼ cup butter melted

Preparation
- Preheat oven to 350℉ and spray 8x4 loaf pans (x2) with non-stick cooking spray.
Brown Sugar Pecan Topping
- In a small bowl, combine the brown sugar, flour, chopped pecans, and melted butter. Mix well.
Pumpkin Bread
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, salt, nutmeg, cloves, ginger, and pumpkin pie spice.
- In a large bowl, beat eggs, pumpkin puree, sugar, brown sugar, vanilla extract, and vegetable oil together until well combined.
- Gradually add the flour mixture into the pumpkin mixture, and beat until well combined.
- Evenly pour batter into the two loaf pans.
- Top the two loafs with the pecan topping before placing in the oven.
- Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
