Pumpkin Bread with Brown Sugar Pecan Topping

Pumpkin Bread

  • 2 cups all-purpose flour
  • 1-¼ tsp baking powder
  • ½ tsp baking soda
  • 1-½ tsp cinnamon
  • ½ tsp salt
  • ½ tsp nutmeg
  • ½ tsp cloves
  • ¼ tsp ginger
  • 1 tsp pumpkin pie spice
  • 4 large eggs
  • 15 oz pumpkin puree
  • 1 cup sugar
  • ½ cup light brown sugar packed
  • cup vegetable oil

Brown Sugar Pecan Topping

  • ¾ cup brown sugar
  • ¼ cup flour
  • ¾ cup pecans chopped
  • ¼ cup butter melted

Preparation

  • Preheat oven to 350℉ and spray 8x4 loaf pans (x2) with non-stick cooking spray.

Brown Sugar Pecan Topping

  • In a small bowl, combine the brown sugar, flour, chopped pecans, and melted butter. Mix well.

Pumpkin Bread

  • In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, salt, nutmeg, cloves, ginger, and pumpkin pie spice.
  • In a large bowl, beat eggs, pumpkin puree, sugar, brown sugar, vanilla extract, and vegetable oil together until well combined.
  • Gradually add the flour mixture into the pumpkin mixture, and beat until well combined.
  • Evenly pour batter into the two loaf pans.
  • Top the two loafs with the pecan topping before placing in the oven.
  • Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
