Starbucks Cranberry Bliss Bread Copycat

Ingredients
  

Loaf
  • 1 cup flour
  • 1/2 cup whole wheat flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 cup unsalted sweet cream butter softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 cup buttermilk
  • 1 cup dried cranberries 1/2 cup for bread + 1/2 cup chopped for decorating
  • 1 cup white chocolate chips 1/2 cup for bread + 1/2 cup for melt
Vanilla Icing
  • 2 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 2-4 Tablespoons milk
For Topping
  • 1/2 cup dried cranberries chopped
  • 1/2 cup white chocolate chips melted

Method
 

Loaf
  1. Preheat oven to 350°F and prepare a 9" loaf pan with nonstick baking spray or butter.
  2. Sift together dry ingredients into a large mixing bowl.
  3. Using a standing mixer, cream together the butter and sugar.
  4. Add eggs one at a time, mixing as you go, until incorporated.
  5. Alternate adding dry ingredients and buttermilk to your mixer with wet ingredients, with dry ingredients being the last thing you add.
  6. Stir 1/2 cup dried cranberries and 1/2 cup white chocolate chips into your batter until evenly distributed.
  7. Pour batter into the prepared loaf pan and bake for an hour.
  8. Once baked, allow to cool completely before removing from pan. After removing from pan, transfer to a wire rack
Vanilla Icing
  1. In a medium mixing bowl, whisk together the powdered sugar, vanilla and milk until well combined.
Topping
  1. When loaf is cool, pour vanilla icing over the cranberry bliss bread and allow to dry for at least 30 minutes.
  2. Top with 1/2 cup chopped cranberries and white chocolate drizzle.
  3. Allow all toppings to set before slicing.
